- Mash the Beans: Place drained beans in a skillet over medium heat. Lightly mash roughly $1/4$ of the beans with a fork to create a “paste” that holds the filling together.
- Season: Add corn, cumin, paprika, and salsa. Stir and heat for 5 minutes.
- The “Glue”: Stir in the cheese until melted. This acts as a binder so the filling doesn’t fall out of the shell.
- Assemble: Spoon the mixture into warmed tortillas. Top with a dollop of yogurt, mashed avocado, and lettuce.
Tip: If your kids prefer a “beef” look, use black beans; if they like a milder, creamier taste, go with pinto beans!
